Wild Sage Tea

A soothing caffeine-free infusion using Arabica wild sage

Makes a 4-5-cup teapot

Ingredients
  • 1/2 jar Arabica Wild Sage Buy online
  • Local honey, to taste
  • Lemon juice (optional)
  • 1 litre Hot water
  • Baklawa Pastries Buy online
Method

Bring a kettle of water to a rolling boil. Heat the teapot by swirling around some boiling water in it, and then pour it out. Add the Arabica Wild Sage leaves and pour in 5 cups of boiling water. Sweeten to taste and leave to infuse for 5 minutes. If you’d prefer not to have little bits of sage floating around in your cup then pour using a small strainer.

After you finished, sit back flick the switch on your kettle and repeat. You will get at least 2 flavourful infusions.
If you want a much stronger infusion use half the quantity above and add the the Wild sage leaves to a pan of boiling water and simmer for 5 - 10 mins

Tips

You can achieve a more intense infusion by adding the the Wild sage leaves to a pan of boiling water and simmer for 5 - 10 mins
