THE WOMEN GROWERS OF THE LEVANT

On their journey through the Middle East, Jad and James discovered the women growers of the Levant, small local co-operatives who use traditional agricultural methods to produce spices, pulses, fruits and vegetables that are the envy of the world. Their non-intensive methods ensured that the land was kept fertile and well-irrigated. It was crucial to the philosophy of Arabica that their sources were grown and prepared with the finest traditional values and with respect for the culture of the Levant. It was also vital that these sources were able to thrive with fair prices paid for their produce.

Happy to be treated with such respect, the women of the co-operatives taught them the secrets of great Levantine produce and how to prepare and present it. They revealed the secrets of grinding, roasting and blending of spices, the balancing of cool and hot flavours; succulence, creaminess and crunch; blandness and piquancy. Most of all, they indoctrinated them into the art of combining these elements to create an incredibly healthy, yet exciting diet, rich in olive oil, garlic and citrus.
