Our meat is all free range. Our fish is from sustainable sources. We source locally and seasonally where we can and organic where it makes sense. Our ingredients come from the widest range of dedicated suppliers, from Lebanese and Jordanian women’s growing co-operatives, spice traders, nut roasters, vintners and the great farmers, fishmongers, butchers closer to home. We are committed to minimising our carbon impact and hold sustainable practice and ethical values at the heart of what we do.
