We’ve been fortunate over the past decade or so to meet some incredibly inspiring individuals who have influenced, educated, shaped and reinforced our approach to our sensible sourcing policy, company ethos and culture.
The finest food is the freshest, purest, most local and seasonal. There is logic in nature and we should learn from it. Our meat is all free range. Our fish is from sustainable sources. We source locally and seasonally where we can and where it makes sense. Our ingredients come from the widest range of dedicated suppliers, from Lebanese and Jordanian women’s growing co-operatives, spice traders, nut roasters, vintners and the great farmers, fishmongers, butchers closer to home. We are committed to minimising our carbon impact and hold sustainable practice and ethical values at the heart of what we do.
